"INSALATA KATRINA" (Kathy of Paris)
You may not think that you actually need a recipe for this one, but for those of you who are culinarily challenged, here goes:
Ingredients;
Lettuce (different kinds, arugula is good to add)
Cucumbers
Tomatoes
Red Onion
Grated carrot
Canned corn
Cooked beets
Optional greens to add: Broccoli, cauliflower, cabbage,avocado
Protein to add: Tuna, Hard boiled eggs, cheese (mozzarella is good)
Add any combination of the above to make a nice (abundant), healthy salad. To make the dressing it is important to have very good olive oil (preferably Italian) and balsamic vinegar. Combine about 1 cup olive oil and half a cup of balsamic vinegar together and add salt and pepper to taste. Taste the dressing and see if it needs more of any of the ingredients and then add as needed. You can store the dressing in the fridge for days, if you make too much for the salad.
